Whole Food, Corn Free Taco Bowls 3 Ways
Around here a simple, delicious meal becomes a staple meal. Taco Night happens virtually every week in our home and it has become a much loved favorite dinner.

Who Says Tacos Have to be in a Corn Shell?
We like to spice up the way we enjoy tacos around here! As much as possible, we try to stay away from corn. The reason is that it is a grain that is very hard to digest. For those with intestinal permeability, eczema, allergies and autoimmunity, corn tops the list of trigger foods that cause and fuel the fire with these health problems. The other problematic factor with corn is that most of it is GMO. You can learn about GMO’s here.
Even while staying away from corn, there are so many ways to serve tacos. Of course, we always have the foundation as taco meat, which for us is always grass-fed, organic ground beef with my Organic Bulk Taco Seasoning.
My Family Enjoys Taco Night Four Different Ways
Taco salads are a great choice because of all the nutrient-rich vegetables that can be added. If I’m feeling really ambitious and happen to have more time that evening because it’s not a busy mom night, then I will fry up my own sweet potato chips in organic coconut oil and serve the meal nacho style. Sometimes I use the chips linked below to make it quick too. Taco shells are a winner, but again, they don’t have to be corn. You can see my full list of corn-free options for tacos below.

Make your own Grain-Free Crepes
Butter Lettuce Cups or Collard Greens
{For Nachos} Inka Plantain Chips or Jackson’s Honest Sweet Potato Chips
One of the quickest ways to serve tacos is in a bowl. Honestly, that is my go-to more often than not. Taco bowls can be served in a variety of ways.

*Use organic vegetables when possible to reduce your toxic load.
**For the julienne carrots, I like to buy the organic ones in a bag that are already cut for me. It saves time!
***If you don’t have homemade bone broth on hand, we really like this brand.
Base: Taco Meat (Ground Beef or Ground Turkey), Bone Broth and Caramelized Onions
Way 1
Add to the base, 1 peeled, diced, cooked, orange sweet potato, 1 cup julienne carrots and top with sliced green onions.
Way 2
Add to the base, 1 peeled, diced, cooked, white sweet potato, 1 diced, cooked red bell pepper, 1 cup frozen peas (leave off if not tolerated or if following strict Paleo), top with Homemade World Famous Guacamole. * Can substitute sauteed spinach or kale for peas.
Way 3
Add to the base, 2 sliced, cooked zucchini, 1 cup julienned carrots, 1 diced, cooked red bell pepper, mix in shredded lettuce and top with grated, raw, grass-fed white cheddar cheese (leave off for dairy-free).
- ½ C. Bone Broth, organic and grassfed
- 2 White Onion sliced
- Add to base:
- 1 peeled, diced & cooked, orange sweet potato
- 1 cup cooked, julienne carrots
- Top with sliced green onions.
- Add to base:
- 1 peeled, diced & cooked white sweet potato
- 1 diced, cooked red bell pepper
- 1 cup frozen peas (leave off if not tolerated or if following strict Paleo)
- *Can substitute sauteed spinach or kale for peas.
- Top with Homemade World Famous Guacamole on www.feastingonjoy.com
- Add to base:
- 2 sliced, cooked zucchini
- 1 cup cooked, julienne carrots
- 1 diced, cooked red bell pepper
- Mix in 1 cup shredded iceberg lettuce per bowl
- Top with grated, raw, grass-fed white cheddar cheese (leave off for dairy free)
- Prepare base by browning 1lb of meat and 2Tlbs. of Feasting On Joy's Organic Bulk Taco Seasoning. Add ½ C. bone broth and let simmer until very little liquid remains *For my family of four, who are big eaters, I use 2 lbs. of meat and ¼ c seasoning for taco night and ¾ C. bone broth.
- Caramelize sliced onions in the same pan that you cooked the taco meat in at the same time you cook the meat.
- Once the base is done add in the veggies from way 1, 2 or 3.
- For any veggies that need to be cooked longer, like sweet potatoes, you'll want to add them in when you add the onions.
- Serve the meal in bowls and tops with suggested toppings.
