Remember I told you in this post that there was a fun dessert that my kids look forward to every year that you could use my Dairy Free Touch of Caramel Sweetened Condensed Milk for? This is THAT dessert! Before changing our diet and lifestyle we would make a different version of this every time we went to the mountains to see the snow. Now that we live in a land where we actually get snow and we eat free of junk, the clean version I developed has become an annual dessert tradition. It took a while to bring it back after I realized I couldn’t have it anymore due to the very unhealthy canned version of sweetened condensed milk used but now that I solved that problem we enjoy this thoroughly. It has become a tradition that we have this on the first big snow day of each year. We love to take the first snow day off of school too!
This year we have actually had a bit of a warmer winter so we haven’t had as much snow, much to my dismay because I love the snow. However, we decided to go find snow last week and I discovered that the ingredients and tools needed to make this dessert travel quite well. So, after a day of sledding and tubing I pulled out the tools and ingredients from the back of our car, went and scooped up some snow and mixed it all together and we devoured the snow ice cream. Yummers!
This takes about 5 minutes to make and even the kiddos can do it.
Try this GAPS Friendly and AIP Friendly Dessert next time you are around snow!
- 8-10 C. Freshly Fallen Snow
- 1 Recipe Dairy Free Touch of Caramel Sweetened Condensed Milk (from www.feastingonjoy.com)
- 1 tsp. Vanilla Extract
- In a large mixing bowl scoop 8-10 cups of fresh snow. Pour Touch of Caramel Sweetened Condensed Milk**see note** over the snow and the pour the vanilla extract over. Stir it all together until you don't see anymore white in the snow.
- Scoop the Snow Ice Cream into small bowls and serve immediately.
