Hearty Breakfast Casserole~ Two Ways {GAPS Friendly, Paleo, Dairy & Nut Free}

In all seriousness, sometimes a good solid breakfast is hard to put on the table – especially during the weekdays. These breakfast casseroles have saved the day when it comes to feeding my hungry family on those busy mornings. My Hearty Breakfast Casseroles are hot, filling and loaded with good fats and nutrition which help all the guys feel full longer and be able to focus on their school or tasks while at work. They help me to start my day off right with satiating protein and no sugar too!
In our house, I probably make this casserole twice a month and it only takes about 15-20 minutes to whip up. I usually make and bake it the night before but I have even made it the morning of and I only have 30-45 minutes to get breakfast on the table in the mornings. It’s a convenience food but without low-quality ingredients or fillers. One of the things I love is that this casseroles usually serves us for two breakfasts which means I don’t have to cook in the morning for two days in a row!
Generally, I put whatever vegetable I feel like or have in the fridge in it and vary the meat. We like to put ground breakfast sausage or taco meat in it for the best flavors! I have tried bacon and we really love our bacon crispy around here so the fact that it gets soggy baked in a casserole makes us steer clear of using it in this dish.
There is really no specific ingredient information for this recipe except for using organic eggs and organic spinach. If you don’t, you are potentially getting antibiotics, gmo’s, soy as well as pesticides and herbicides in your body which are toxic and can cause a myriad of poor symptoms. Yes, they cost more but so do doctors bills. I would rather pay more for food than doctors bills and medication. I’m sure you feel the same. By the way spinach is on the Dirty Dozen list so that means it’s heavily sprayed with toxic chemicals. It’s worth it to buy organic.
- 12 Organic Pastured Eggs
- 16 oz. Organic Breakfast Sausage in tube packaging or individual with casings you take off
- 4 Oz. can Organic Chopped Green Chilies (mild)
- ½ Yellow Onion, diced
- 4 Heaping Cups of Fresh Baby Spinach, chopped
- 2 Small Zucchini, sliced into half moons then quartered
- 1 Sweet Potato (yellow or orange), peeled and cubed in ½ inch cubes
- ½ Tsp. Freshly Ground Black Pepper
- 1.5 Tsp. Sea Salt
- 1 Tsp. Garlic Powder
- Coconut Oil for greasing your pan
- 12 Organic Pastured Eggs
- 16 oz. Taco Meat (maybe leftovers from a previous meal)
- 4 Oz. can Organic Chopped Green Chilies (mild)
- ½ Yellow Onion, diced
- 4 Heaping Cups of Fresh Baby Spinach, chopped
- ½ C. Fresh or Jarred Organic Salsa
- 1 White Sweet Potato (or yam), peeled and cubed in ½ inch cubes
- ½ Tsp. Freshly Ground Black Pepper
- 1.5 Tsp. Sea Salt
- 1 Tsp. Garlic Powder
- Coconut Oil for greasing your pan and 1 Tlbs. for sauteing potato and onions (If making Way Two.)
- Avocado and 2 Roma Tomatoes, Diced (if making Way Two)
- Preheat oven to 350 degrees
- Grease a 9 x 13 pan with coconut oil.
- Place breakfast sausage in a medium size pan along with diced onions. Saute until meat is browned and onions are translucent.
- Remove them from pan and place in a separate bowl leaving the grease in the pan.
- To the grease, add the diced sweet potatoes and saute until tender and have color on them.
- Crack all of the eggs in a big mixing bowl and add the green chilies, spinach, zucchini, and seasonings and mix it all well.
- Add cooked sausage, onions and sweet potato and mix well.
- Pour mixture into greased pan and cook for 20-25 minutes until the middle is set and not runny or wet looking.
- Preheat oven to 350 degrees
- Grease a 9 x 13 pan with coconut oil.
- With 1 Tlbs. Coconut oil, place onions and white sweet potato (or yam) into a saute pan. Saute until potato is tender and onions are translucent.
- Crack all of the eggs in a big mixing bowl and add the green chilies, spinach, salsa, and seasonings and mix it all well.
- Add cooked onions and sweet potato and mix well.
- Pour mixture into greased pan and cook for 20-25 minutes until the middle is set and not runny or wet looking.
- Serve topped with Avocado and diced Roma tomatoes
Can make and bake the night before and warm it before serving the next morning.
