Grain Free, Nut Free Cranberry Apple Breakfast Muffins

Tart cranberries and sweet apples pair well together in this moist breakfast muffin. We love healthy, homemade muffins around here because they are a simple breakfast that fills us up especially because of the good fats and fiber that’s in them.

When we’re running late trying to get somewhere in the morning, muffins are a quick fix that satisfies. I like to make them the night before while I make dinner. Yep, multi-tasking is a must for a mom whose desire is to feed her family wholesome food. What I love is that I get to wake up the next morning and know that I don’t have to make breakfast! For those of us that don’t feel good in the mornings or just have a lot going on, this breakfast is a winner. You can serve it with a cup of bone broth and really get your day started right!

Let’s Talk About Important Ingredients

Use organic eggs when possible. Pastured are even better. You won’t be getting GMO’s, pesticides, or soy and you will be getting healthy eggs from healthy chickens.

I love to get my palm shortening in bulk here because it’s tested to be free of Glyphosate.

This is my favorite coconut flour. When it’s not available at my local Costco, I buy it here.

This is the best Apple Cider Vinegar because it has the mother which means that all the fermentation goodness keeps happening while it sits on the shelf.

Be sure to buy your apples and apple juice organically since they are on the EWG’s dirty dozen list which means they are sprayed with a lot of herbicides and pesticides which don’t go away when the apple is washed.

For the cranberries, I always stock up on organic ones during the fall. They last me throughout the year. Every time I go to the store I pick myself up a bag. When I get home, I wash them and then freeze them on a sheet pan and then place them in a container to store in the freezer. I  use them year round in baked goods and smoothies.

For things like arrowroot flour, baking soda, cardamom and cinnamon, I love to use Thrive Market. Their prices are some of the most inexpensive and they make it easy to source hard to find foods. Cranberry Apple Breakfast Muffins

Try these sweet and tangy muffins for your next quicky and healthy breakfast.
Ingredients
  • 4 Organic Eggs
  • ¼ C. Organic Maple Syrup
  • 2 Tsp. Vanilla Extract (alcohol-free)
  • ½ C. Palm Shortening, melted
  • ¼ C. Organic Apple Juice
  • 1 Tsp. Apple Cider Vinegar
  • 1 Organic Fuji Apple, peeled and diced
  • 1 C. Organic, Fresh, Whole Cranberries (can be frozen)
  • ¼ C. + 2 Tlbs. Coconut Flour
  • 2 Tlbs Arrowroot Powder
  • ¾ Tsp. Baking Soda
  • ¼ tsp. Ground Cardamom (can use 2 drops doTERRA Essential Oil for sub)
  • ¼ tsp. Ground Cinnamon (can use 2 drops doTERRA Essential Oil for sub)
  • ¼ tsp. Sea Salt
Instructions
  1. Preheat your oven to 350 degrees.
  2. With a hand mixer or stand mixer, beat eggs for one minute. Add vinegar, apple juice, vanilla and maple syrup until combined. While mixing, gently pour in the melted palm shortening and blend on high for 30 seconds.
  3. Combine all the dry (powdered) ingredients and whisk together until combined.
  4. Add the dry ingredients to the wet ingredients and mix until fully incorporated.
  5. Gently fold in the diced apples and cranberries.
  6. With a muffin scoop or spoon, fill muffin cups a little over two-thirds full.
  7. Cook for 20 minutes until they are set in the center.
  8. Serve warm with organic ghee on top
