Nut Free Comforting Sweet Potato Casserole {with Cardamom Essential Oil}

A creamy, comforting vitamin-packed sweet potato casserole with the crunch of sweet, nut-free granola and a hint of the unique flavor of cardamom.
  • 5 Cups, Organic Sweet Potato, roasted, peeled and smashed (I use my Instant Pot!)
  • 3 Organic Eggs
  • 1.5 tsp. Fine Sea Salt
  • ½ C. Coconut Milk (I like filler free Natural Value Band)
  • 3 tsp. Ground Cinnamon
  • ¼ C. + 2 Tlbs. Organic Pure Maple Syrup
  • ½ tsp. Ground Nutmeg
  • 4 drops doTERRA Cinnamon Bark Essential Oil
  • 1 drop doTERRA Cardamom Essential Oil
  • 2 tsp. Alcohol Free Vanilla Extract
  • 2 Tlbs. Organic Ghee, melted
  • Coconut oil (for greasing baking dish or you can use additional ghee)
  • 1 Batch of Feasting On Joy's AIP Baked Apple Cinnamon Granola
  1. Grease a 9 x 13 baking dish with coconut oil {or if you choose ghee.}
  2. Preheat oven to 350 degrees.
  3. Add sweet potatoes to a large mixing bowl.
  4. Mix all of the rest of ingredients into sweet potatoes using a hand mixer.
  5. Spread sweet potato mixture in baking dish and smooth out the top.
  6. Bake for 35 minutes in the oven until the middle is set and the edges have a little bit of color.
  7. When it's warm, and right before serving, top with AIP Baked Apple Cinnamon Granola and press it in slightly to the sweet potato casserole.
  8. Serve hot.
