Chicken fingers are one of the top 10 comfort foods of all time!
Sometimes changing your diet can be frustrating. Eliminating grains, gluten, and nuts can top the list with overwhelm. I’m here to encourage you though! You can still eat delicious food {like these crunchy chicken fingers} when you have to eliminate certain ingredients.
It’s just a matter of retraining your palette and learning to cook with more nutrient-dense flours.
My Quick Technique for Making Chicken Fingers
I used to bread each strip individually which took FOREVER. Since my life is crazy and I don’t have time for that, I created a new way of breading the chicken that works really well and helps to give the chicken the crunchy texture.

Specific Supplies You’ll Need to Make These Chicken Fingers
Stainless Steel Pan These are my favorite for all things cooking and baking. I never use aluminum kitchenware and you shouldn’t either. It damages your mitochondria in your brain cells and lodges in your brain cells causing Alzheimer’s’ Do yourself a favor and get a set of stainless sheet pans.
Metal Tongs I always use stainless tongs and not the ones that have a plastic coating. Plastic contains endocrine disruptors and should be eliminated from the lifestyle as much as possible.
Wire Rack having one of these is really important so your chicken fingers can get air while they are warming in the oven. If they sit on the pan directly, they will get soggy.
Stainless Frying Pan {or a set of pans} You can also use Cast Iron. What you use to cook your food in is vitally important for reducing toxins and keeping your food and body healthy. Ditch the Teflon and nonstick and only use stainless or cast iron.
Metal Whisk these tools are so handy for mixing dry and wet ingredients. I like the metal ones as opposed to plastic.
Important Nutrient-Dense Ingredients You Need to Make These Chicken Fingers
Organic Coconut Oil {I LOVE the stuff that doesn’t taste like coconut oil} Not all coconut oil is created equal. It’s important to find sustainably sourced as well as free from glyphosate. This is the only brand I love.
Coconut Flour this flour is a unique one and a little goes a long way since it likes to soak up a lot of moisture. I purchase 4 lb. bags though so I can have it on hand when I need it.
Arrowroot Powder this is one of the least expensive places I have found to purchase arrowroot powder. I love this ingredient because it’s what helps add the crunch to the chicken fingers.
Himalayan Salt I use both Celtic Salt and Himalayan Salt but I gravitate more toward pink salt since it doesn’t have any mercury in it.
Crunchy Chicken Fingers {Grain, Gluten & Nut Free} Recipe!
Without further ado, here is the recipe you’ve just got to make today.
- 4 Organic, Pastured Chicken Breasts salt and peppered and cut into strips
- ¾ C. Coconut Oil (see post for my favorite brand that doesn't taste like coconut)
- 2 Organic, Pastured Eggs
- ½ C. Coconut Flour
- ½ C. Arrowroot Powder
- ½ tsp. Garlic Powder
- 1 tsp. Paprika
- 1¼ tsp. Himalayan Salt {divided}
- ¼ tsp. Onion Powder
- ¼ tsp. Freshly Ground Black Pepper
- Mix all dry ingredients with 1 tsp. of the salt, in a small mixing bowl.
- Whisk until combined.
- Place coconut oil in your pan on medium heat and let get hot.
- In the meantime, place your chicken strips into a large mixing bowl.
- Crack two eggs over the chicken, add ¼ tsp. salt and mix until all the strips are coated.
- Pour dry ingredients over the chicken and stir until you have coated each piece of chicken.
- *There will be some lumps and some dry mixture at the bottom of your bowl. That's OK!
- One by one, place each chicken strip into the hot coconut oil.
- Fry on each side until golden brown and the chicken is cooked through. Usually about 3-4 minutes per side.
- If you notice your chicken getting too dark too fast then turn the heat down a little bit. Continue in batches until all chicken is fried.
- During the frying I like to place my finished chicken fingers on a sheet pan with a wire rack and keep them in my oven set to warm.
