DETOX
Since I use this herbal coffee for the base, and it has chicory, carob, dandelion and Ramón seeds, it is an excellent way to boost your body’s natural cleansing and detox functions.
VITAMINS & MINERALS
Maple Syrup and a date are the whole-food sweeteners I use for this drink and they are full of calcium, iron, phosphorus, sodium, potassium, magnesium, and zinc as well as thiamin, riboflavin, niacin, folate, vitamin A, and vitamin K.
HEALTHY FATS
In order to get the creamy texture in the butter coffee and the addition of a healthy fat to help metabolize the natural sugars and boost brain function, I use ghee. Ghee is clarified butter that can easily be made at home but I tend to buy it here to save time. It is lactose and casein free and jam-packed with fat-soluble vitamins like vitamin E and K and can help to heal leaky gut. Ghee has butyrate which is a short chain fatty acid that helps feed the good bacteria in your gut due to its prebiotic nature.
GUT & JOINT HEALING PROPERTIES

However, the herbal coffee does the trick, plus I don’t have to worry about herbicides, pesticides or mold since it’s organic.
- Organic Medjool Dates Oh, how I love dates. They are God’s candy. These always satisfy a sweet craving and help me not to make bad decisions when I need something sweet on a whim.
- Organic Cinnamon Be sure to buy your spices organically grown. It may seem unnecessary but you can read here and here, why it’s important.
- Organic Ghee Tested to be Lactose and Casein Free Not all Ghee is free of casein due to companies allowing trace amounts to remain in their product. I like this brand because I know it is free of both casein and lactose. Here is the least expensive place I have found it.
- Organic, Filler Free Coconut Milk for gut healing, it’s important not to eat foods with guar gum or xantham gum in them. Usually, coconut milk has one of these in it to emulsify it and help it not to separate. I choose a filler-free, gum version of coconut milk that it literally just coconut milk and water.

AIP Creamy Butter Coffee {Dairy Free} Recipe
- 16 ounces of boiling water
- 1 Organic Medjool date, pitted
- 1 Herbal Coffee Bag (see post for the exact brand)
- ¼ tsp. Organic Ground Cinnamon
- 1 Tlbs. Organic Ghee
- 1 Tlbs. Organic Maple Syrup
- ¼ C. Organic Coconut Milk
- 1 Scoop Collagen Peptides
- Place the pitted Medjool date in your mug of boiling water along with the herbal coffee bag. Cover and let steep for 5 minutes.(This helps to soften the date for blending.)
- Add herbal coffee with Medjool date to your high-speed blender with all the rest of the ingredients.
- Blendon high speed until creamy and frothy about one and a half to two minutes.
- Pour back into your mug and enjoy!

Ramon seeds are the seeds of fruit and don’t have the same components that tree nuts do. I am not 100% about this but I would say they are fine on the AIP protocol. First time I’ve personally heard of butter coffee in the West, because it’s actually a traditional Hainanese (Chinese) way of making coffee here! 😀
