Snacking is a big deal in my boys minds. In fact, whenever I am in the kitchen they think it is time to eat either a meal or a snack. I like to try to have snacks on hand that they can eat that are healthy and fun and don’t have the added nasties (chemicals and preservatives) in them.
I have never been a big cucumber fan until I came across this way of eating raw cucumbers. Cucumbers are healing and have A, B, C vitamins and folic acid in them. They are known to help with digestion and help to reduce inflammation too. The addition of apple cider vinegar and sea salt really boosts the flavor of the cucumber and reduces the bitterness. This 3 ingredient snack is simple and can be made ahead. It will last 1-2 days in the fridge or of course you can eat it right away. Be sure to make this snack in a glass container with a lid and NOT plastic. You can see the recipe for why.
3 Ingredient Quick and Easy Cucumber Snack ~ AIP Friendly. GAPS Friendly.
- 1-2 Organic Cucumbers, sliced into coins (We like Persian cucumbers the best)
- 2-3 tsp. Apple Cider Vinegar
- ½ tsp. sea salt (may need more or less to taste)
- In a glass dish with a lid (not plastic as acid leaches BPA out of plastic) combine all ingredients. I like to layer one layer of cucumbers and then put some of the ACV and some of the salt. Then add another layer until all ingredients are used up. Close the lid to the container and shake all around to coat all the cucumbers. You can eat these immediately or store them in the fridge. Enjoy this refreshing snack!
