Summertime and Ice Cream – They Just Go Together
For some reason this summer, I have been craving ice cream. Maybe it’s because I’ve been perusing one of my favorite dairy-free ice cream cookbooks deciding what to make for a while now? It definitely has my mouth watering!
Since I overhauled my diet to heal my Hashimoto’s and Epstein Barr, I have chosen not to eat dairy and up until recently, I hadn’t had any nuts in my diet either. They pretty much still aren’t in my diet, except for the occasional almond flour cracker because they make my skin flare up if I have too much.
A Quick Dairy-Free Ice Cream Fix That Only Takes 10 Minutes
Living the crazy life we have in this season, I decided to make a quick, and refreshing ice-cream dessert with two ingredients that I had on hand. Yes, all the other recipes in my cookbooks and online look amazing and I still do plan on making some of those, but this dessert is so quick to whip up that it has become my go-to for satisfying my ice cream craving.
What You’ll Need to Make This Delicious Strawberry Mint Ice Cream
Though there are only two ingredients, which I’ll share with you below — there is also a very important tool that you absolutely need to have to make this recipe. Check out what you’ll need in the green box:
- Oddly, enough, the tool you will need is not an ice cream maker (though this is my favorite one). Instead, you’ll need a juicer. The juicer we own that has served me for years has an attachment the doesn’t strain what you juice so that means I can put frozen bananas in it or frozen strawberries and out the other end will come soft serve ice cream. It’s awesome because it will even make nut butter this way. I love the versatility of this juicer. Just know, in order to make this ice cream, you will need a juicer with this capability.
- The other option that could work (though I haven’t tried it) is a high-powered blender like this brand that we’ve owned for over 20 years. It’s completely awesome and I don’t see why it wouldn’t do the trick.
- You’ll also need organic strawberries. Friend, please don’t buy non-organic strawberries since they are on the EWG as one of the fruits that is covered with the highest amounts of cancer-causing herbicides and pesticides. It’s just really easy to buy them in season, organically.
- The only other ingredient you will need is Grade 1 Peppermint Essential Oil. Don’t use anything other than Grade 1 since you will be ingesting which means any other grade could be dangerous for your body due to contaminants and rancid filler oils.
- One other kitchen tool that comes in handy when freezing your strawberries is a sheet pan to lay them flat on. This is my favorite kind.
- *I also want you to keep in mind that Peppermint Essential Oil should not be used with people who have blood pressure issues or who are pregnant.
2 Ingredient Strawberry Mint Ice Cream {Dairy & Nut Free}
Without further ado, here is my healthy ice cream recipe that you can make in just minutes!
- 2 16oz. Containers of Organic Strawberries
- 1-2 Drops of Grade 1 Peppermint Essential Oil
- Prepare a large sheet pan by covering it with wax paper.
- Wash and dry all organic strawberries.
- Slice off any bad spots.
- Cut off green tops and slice strawberries into halves or quarters depending on how big they are.
- Place strawberries on the sheet pan with wax paper.
- Freeze the strawberries overnight.
- At this point, you can place your frozen strawberries into a bag to keep in the freezer or you can follow the next step to make your ice cream.
- Place all the pieces of your frozen strawberries into the juicer.
- Once all the berries are juiced, add your peppermint oil and stir.
- At this point, you can eat the ice cream like soft serve or you can freeze it for an hour or two to let it harden a bit more.
- *Note if you freeze it overnight it will become quite hard. Just let it thaw a little bit on the counter so you can scoop it.
